Homemade Mayonnaise

A simple from-scratch homemade mayonnaise made with pantry staples. Creamy, smooth, and ready in minutes using a blender or immersion blender.

Ingredients
  

  • 2 large eggs
  • 1 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon white vinegar
  • 1 teaspoon dry mustard
  • ½ teaspoon paprika
  • 1 teaspoon sugar
  • ½ teaspoon salt

Equipment

  • 1 immersion blender
  • 1 wide mouth quart jar
  • measuring cups

Method
 

  1. Add eggs, lemon juice, vinegar, dry mustard, paprika, sugar, and salt to a blender or tall jar.
  2. Pour oil on top and let rest for 30 seconds.
  3. Blend on high until thick and creamy, stopping to scrape sides if needed.
  4. Taste and adjust salt or acidity if desired.
  5. Transfer to a jar and refrigerate.
